October’s Recipe:

Red Bean and Quinoa Chili

A 30 minutes or less meal!


1 can low sodium organic kidney beans and white beans, rinsed

1lb ground organic turkey or chicken cooked with onions

½  teaspoon cumin

½ teaspoon of tumeric

2 cups water

2 teaspoons extra –virgin olive oil or grapeseed oil

1 med sweet onion, chopped

1 teaspoon Himalayan salt

1 large orange and red pepper, chopped

2 cloves garlic, minced

1 teaspoon dried oregano or fresh

¼ teaspoon cinnamon

1/8  teaspoon cayenne

1 cup pre-cooked quinoa or brown rice

1 cup fresh or frozen corn

1 cup organic tomato sauce or paste

1 can organic crushed tomatoes


Sauté onions in oil then add ground turkey and other seasonings and brown until meat is thoroughly cooked. In a large pot with 2 cups of water add corn, tomato sauce, crushed tomatoes, peppers and beans and heat. When meat is cooked add to large pot with other ingredients. Simmer together about 20 min.  Add cooked quinoa or brown rice to other ingredients and blend about 5 minutes before serving or just serve on top of cooked quinoa.  Top each bowl with a sprinkle of grated organic cheese or nutritional yeast if desired. Enjoy!!
